RECIPE: Beef and Bean Burritos

Keeping food simple is often the easiest way to stay healthy. This mince and bean mix is such a versatile base recipe in which you can make not only burritos but also spaghetti bolognese, cottage pie, and tacos.

This recipe serves 6-8 people.

INGREDIENTS:

  • Whole grain burrito wraps

  • Olive oil spray

  • 1 large onion, peeled and diced

  • 500g lean beef mince

  • 420g of kidney beans, drained and rinsed

  • 2 tbsp tomato paste

  • 1 tsp paprika

  • 2 tsp ground cumin

  • 1-2 cups salad of choice - lettuce, grated carrot, diced capsicum, cucumber and tomato

High energy requirements? Add cheese, avocado and cooked brown rice.

Keeping lean? Try flavouring with 1:1 salsa and yoghurt.

METHOD:

  1. Spray a large non-stick saucepan with oil and place on medium to high heat.

  2. Cook onion for approximately 3 minutes, stirring occasionally.

  3. Add mince and brown for 5 minutes, stirring to break up lumps.

  4. Mix through cumin, paprika and season with pepper; cook for 1 minute until fragrant.

  5. Add tomato paste, stir well to combine then add beans.

  6. Simmer uncovered for 20 minutes, stirring occasionally until thickened.

  7. If desired, heat tortillas in the microwave for 1 minute on high.

  8. To serve, add 1/4 of the beef and bean mix to 1 tortilla and add plenty of salad. Roll up to enclose filling.

FACT: The gut plays a significant role in your overall health. You need to eat at least 25-30g of fibre each day to help keep the digestive system healthy. Make sure you are including foods such as wholegrain, beans or lentils and vegetables every day.
