RECIPE: Beef and Bean Burritos
Keeping food simple is often the easiest way to stay healthy. This mince and bean mix is such a versatile base recipe in which you can make not only burritos but also spaghetti bolognese, cottage pie, and tacos.
This recipe serves 6-8 people.
INGREDIENTS:
Whole grain burrito wraps
Olive oil spray
1 large onion, peeled and diced
500g lean beef mince
420g of kidney beans, drained and rinsed
2 tbsp tomato paste
1 tsp paprika
2 tsp ground cumin
1-2 cups salad of choice - lettuce, grated carrot, diced capsicum, cucumber and tomato
High energy requirements? Add cheese, avocado and cooked brown rice.
Keeping lean? Try flavouring with 1:1 salsa and yoghurt.
METHOD:
Spray a large non-stick saucepan with oil and place on medium to high heat.
Cook onion for approximately 3 minutes, stirring occasionally.
Add mince and brown for 5 minutes, stirring to break up lumps.
Mix through cumin, paprika and season with pepper; cook for 1 minute until fragrant.
Add tomato paste, stir well to combine then add beans.
Simmer uncovered for 20 minutes, stirring occasionally until thickened.
If desired, heat tortillas in the microwave for 1 minute on high.
To serve, add 1/4 of the beef and bean mix to 1 tortilla and add plenty of salad. Roll up to enclose filling.
