RECIPE: Healthy Rocky Road

Craving something sweet and delicious that won’t send you spiraling into a sugar coma? Try this healthy rocky road, as is, or customize to your liking with different nuts or dried fruits.

INGREDIENTS:

Rocky Road Base:

  • 1 tsp imitation vanilla extract

  • 1 tbs coconut oil

  • 300g no added sugar dark chocolate (try brands such as Well Naturally)

Filling:

  • 1/4 cup pistachios, roughly diced

  • 1/2 cup mini marshmallows, roughly chopped

  • 1/4 cup reduced sugar dried cranberries

METHOD:

  1. Break up the dark chocolate and place in a microwave safe bowl. Microwave for 30 seconds at a time, stirring in between rounds. Continue until the chocolate has melted.

  2. Add the rest of the base ingredients to dark chocolate and stir to combine.

  3. Add the filling ingredients to the chocolate bowl and stir to combine.

  4. Line a square baking tin with baking paper. Spoon the rocky road mixture into the tin and smooth out with a spatula. Refrigerate for 3 hours to set.

  5. Once the mixture has set, cut into 12-24 squares and serve.
